Languedoc and Carcassonne in the South of France

Languedoc boasts one of the most diverse landscapes in the whole of France. Carcassonne is nestled between the Pyrenees to the South, the Black Mountains to the North and to the East is the Mediterranean coast line, only 40 minutes drive from the house. An ideal location for hot summers and skiing in winter.

The region was once home to the Cathars, during the crusades they had to build many castles that still stand in breath taking locations across the region. One of these is Lastours, which is only a ten minutes drive from La Maison Amiel, and has four separate towers to visit.

There are also fantastic swimming lakes nearby, one is a lake near Carcassonne called Lac Cavayere, which has a sandy and stony beach, and boating activities on the lake, plus a tree climbing experience for both the young and old. One of the others is Lac Montaigne, surrounded by trees it feels very Canadian. It's a great place to visit on really hot days, as it is always a few degrees cooler than in Carcassonne.

Restaurants across the region are excellent, Cassoulet is the most famous dish in the region, it consists of a thick stew of haricot beans, sausage, pork, mutton and preserved goose. However this is best to enjoy on colder days in winter. We have made a guide of our favourite restaurants in the Carcassonne area, available in the gite.
